Thai Soup That Warms The Soul!
Ingredients :
- 400 ml of coconut milk
- 2 tablespoons of soy sauce
- 250 g rice noodles
- 200 grams of minced mushrooms
- 2 garlic cloves
- 1 red chili pepper (optional)
- 1 liter of vegetable broth
- 150 g of tofu (or chicken)
- 2 green onions
- Juice of a lime
- Fresh coriander for decoration
Instructions:
1. Start preparing all your ingredients. Slice the mushrooms, chop garlic and ginger, and dice the tofu.
2. In a large saucepan, heat the vegetable broth over medium heat.
3. Add garlic, ginger, and red pepper to the broth, then let simmer for about 5 minutes to release the flavours.
4. Place the mushrooms and tofu in the saucepan, and let cook for another 5 minutes.
5. Then add the coconut milk and soy sauce. Stir well and let sit for about 3 minutes.
6. Meanwhile, cook the rice noodles according to the instructions on the package. Once cooked, drain them and incorporate them directly into the soup.
7. Add the lime juice and blend gently.
8. Serve hot, topping each bowl with fresh cilantro and chopped green onions.
