Slow Cooker Turkey Roast

This slow cooker turkey roast is an easy, delicious meal! Cooked low and slow, the savory flavors are sure to be a hit.

Ingredients

3-4 lb turkey breast or turkey thigh roast

1 tbsp olive oil

1 tsp each salt, pepper, garlic powder, onion powder

1/2 tsp each dried thyme, oregano, cumin

1 large onion, diced

4 cloves garlic, minced

1 1/2 cups chicken broth

1/4 cup each balsamic vinegar and soy sauce

2-3 tbsp honey

2 lbs potatoes, cut into 2-inch pieces

1.5 lbs carrots, cut into 2-inch pieces

4-6 sprigs fresh rosemary and thyme

Instructions

1. Season the turkey roast all over with salt, pepper, garlic powder, onion powder, thyme, oregano, and cumin.

2. Heat the olive oil in a large skillet over medium-high heat. Sear the turkey on all sides until browned, about 2-3 minutes per side. Transfer to the slow cooker.

3. Add the diced onions and garlic to the same skillet. Sauté for 2-3 minutes until softened. Pour in the chicken broth, scraping up any browned bits. Stir in the balsamic vinegar, soy sauce, and honey. Pour this mixture over the turkey in the slow cooker.

4. Arrange the potatoes and carrots around the turkey roast. Tuck the sprigs of rosemary and thyme into the vegetables and turkey.

5. Cover and cook on low for 6-8 hours, until the turkey is very tender and reaches an internal temperature of 165°F.

6. Remove the herb sprigs. Slice or shred the turkey. Serve with the potatoes, carrots, and cooking liquid.

7. For a thicker gravy, strain out about 1 cup of the liquid and whisk in 2 tsp cornstarch. Microwave for 30-60 seconds until thickened and drizzle over the turkey.
