Ingredients:
- 4 boneless chicken breasts (around 1.1 kg)
- 2 teaspoons dried oregano
- 2 teaspoons dried thyme
- 2 teaspoons garlic powder
- 2 teaspoons salt, divided
- ½ teaspoon black pepper
- 120 ml vegetable broth (used instead of wine)
- 2 tablespoons minced garlic (about 6 cloves)
- 1 tablespoon lemon zest (zest of 2 lemons)
- 2 tablespoons fresh lemon juice
- 1 tablespoon brown sugar
- 1 lemon, sliced into 6 wedges (optional)
Directions:
1. Begin by setting your oven to preheat at 200°C (400°F).
2. Blot the chicken breasts dry with paper towels and arrange them in a 23x33 cm (9x13 inch) baking dish.
3. In a small bowl, whisk together olive oil, oregano, thyme, garlic powder, 1 teaspoon salt, and black pepper to form a seasoned paste. Spread this mixture evenly over the chicken.
4. In the same bowl, combine vegetable broth, minced garlic, lemon zest, lemon juice, the remaining teaspoon of salt, and brown sugar. Pour this flavorful sauce over the chicken breasts.
5. Optionally, add lemon wedges between the chicken for an extra burst of citrus.
6. Bake in the preheated oven for 15 minutes.
7. After 15 minutes, baste the chicken with the juices from the dish, then continue baking for another 15 minutes, or until the chicken is cooked through and reaches an internal temperature of 75°C (165°F).
8. Serve hot and enjoy the bright, fresh flavors of this lemon-infused chicken dish!
