This no-bake dessert is a twist on the classic strawberry pretzel salad, offering a zesty lemon flavor that’s ideal for spring and summer gatherings or whenever you’re craving something light and citrusy.

🍋 Lemon Pretzel Salad Recipe

🥨 Crust:

2 cups crushed pretzels 🥨

¾ cup unsalted butter, melted 🧈

¼ cup granulated sugar 🍚

🍦 Creamy Layer:

1 (8 oz) package cream cheese, softened

1 cup granulated sugar

1 (8 oz) container whipped topping (like Cool Whip)

🍋 Lemon Layer:

2 (3 oz) packages lemon-flavored gelatin (Jell-O)

2 cups boiling water 💧

1½ cups cold water

1½ cups crushed pineapple, well-drained 🍍

Preheat & Prep:

Preheat your oven to 350°F (175°C). Lightly grease a 9x13 inch baking dish.

Make the Crust:

In a mixing bowl, combine crushed pretzels, melted butter, and sugar. Press firmly into the bottom of the dish to form an even crust.

Bake for 10 minutes, then let it cool completely.

Whip Up the Creamy Layer:

In another bowl, beat the cream cheese and sugar until smooth and fluffy. Fold in the whipped topping until well combined.

Once the crust is completely cooled, spread this mixture evenly over it. Make sure to seal the edges so the gelatin layer doesn't seep through!

Lemon Topping Time:

Dissolve lemon gelatin in boiling water. Stir in cold water and the drained crushed pineapple.

Let it cool slightly until it begins to thicken (but not set completely), then gently pour it over the creamy layer.

Chill & Serve:

Refrigerate for at least 4 hours, or until completely set. Slice into squares and enjoy the flavor burst!

📝 Notes:

For extra zing, garnish with fresh lemon zest or a tiny dollop of whipped cream before serving!

Make sure the pretzel crust is fully cooled before adding the creamy layer to keep everything perfectly layered.
