umami-packed sauces, creating a balance of sweet, salty, tangy, and spicy notes in every bite.

Ingredients:

For the Sandwich:

  • 1 French baguette or 4 small baguettes
  • 1/2 cup mayonnaise
  • 1 tablespoon soy sauce
  • 1/2 pound cooked protein (grilled chicken, pork, tofu, or deli meat)
  • 1 cucumber, thinly sliced
  • 1 jalapeño, thinly sliced (optional)
  • Fresh cilantro sprigs

For the Pickled Vegetables:

  • 1 cup julienned carrots
  • 1 cup julienned daikon radish (or substitute with regular radish)
  • 1/2 cup white vinegar
  • 1/2 cup water
  • 2 tablespoons sugar
  • 1 teaspoon salt

Instructions:

  1. Prepare the Pickled Vegetables:
  • In a bowl, mix vinegar, water, sugar, and salt until the sugar dissolves.
  • Add carrots and daikon radish to the mixture. Let it marinate for at least 30 minutes (or longer for more flavor). Drain before using.
  1. Prepare the Baguette:
  • Slice the baguette in half lengthwise, but don’t cut all the way through.
  • Lightly toast the baguette for a crispy exterior.
  1. Assemble the Banh Mi:
  • Spread mayonnaise on both sides of the baguette.
  • Drizzle a bit of soy sauce over the mayonnaise for added flavor.
  • Add your cooked protein of choice.
  • Layer on cucumber slices, pickled vegetables, and jalapeño slices (if using).
  • Top with fresh cilantro sprigs.
  1. Serve:
