At the heart of this dish lies tender, flaky cod fillets, perfectly cooked to retain their natural succulence and mild, buttery flavor.

The cod is nestled beneath a rich, golden gratin topping, crafted with a delicate blend of breadcrumbs, herbs, and a touch of cheese, adding a satisfyingly crispy texture and a hint of earthy depth to every bite.

Ingredients (for 4 people):

400g cod fillet (or other farm white fish)
200 grams of peeled shrimp
200 g mussels cooked and peeled
30 g of butter
30 g of flour

10 cl of sour cream
100g of grated cheese (Emmental or Gruyere)
1 shallot , finely chopped
1 tablespoon chopped fresh parsley
Salt and pepper and nutmeg.
Lemon juice (optional)

Cooking fish:
Poach the cod in a saucepan of sparkling salt water for 5-7 minutes. Listen to it gently and crush it roughly.
Prepare the bechamel sauce:
In a saucepan, melt the butter, add the flour and mix to form a brownie.
Pour the milk gradually by whipping until it gets a thick sauce.
Add the sour cream, salt, pepper, a pinch of nutmeg, and chopped shallot. Let it simmer for 2-3 minutes.
Assembling:
In a large salad bowl, mix fish, shrimp, mussels, half the cheese and bechamel sauce.
Add a splash of lemon juice to enhance the flavors if desired.
Gratinez :
Pour it all in a buttered gratin dish. Sprinkle with the rest of the cheese.
Bake at 200°C (390°F) for 20-25 minutes, until the top is nicely golden brown.
Serve warm, sprinkled with fresh parsley, accompanied by rice, steamed apples or a nice green salad.
