Made this and left it in the slow cooker for 12 hours (overnight).. first time trying after getting some inspiration from this group. Came out very well. Thanks all.
Beef Brisket Recipe:
Notes: This recipe has a mild spicyness which comes from the rub and bbq sauce. If you dont want it mildly spicy, change those 2 ingredients out to something less spicy.
Also, once the brisket is fully cooked it will look black, it is not burnt it is just the caramelisation of the sauces on the edges of the meat which gives it a texan flavour.

This recipe is perfect for those who want to create a hearty, comforting meal that’s sure to please a crowd. Brisket is a cut of meat from the breast or lower chest of the cow,
which makes it naturally tough, but with slow cooking, it transforms into a melt-in-your-mouth masterpiece.
INGREDIENTS (all sourced from coles)
• (Approx 2kg) Coles Slow Cook Brisket
Rub:
• McCormick Grill Mates Slow & Low Smokin Texas BBQ rub (1 packet covers 1kg so get x2 packets)
Slow Cooker Sauce:
• Stubb's Hickory Bourbon BBQ Sauce approx 8/10 of the bottle
• Garlic 3 Cloves (grated)
• Black Ground Pepper 1 Teaspoon
• Apple Cider Vinigar 1 Cup
• Worcesterchire Sauce 1 Tablespoon
• Brown Sugar 1/4 Cup
METHOD
1. Pat the meat dry with paper towel
2. Apply rub covering all sides of the meat
3. Cover in cling wrap and let rest for approx 1 to 2 hours
4. Once meat is rested put all Slow Cooker Sauce ingredients in the slow cooker and mix well.
5. Take meat out of cling wrap and place gently into the slow cooker
6. Turn the brisket over so all sides of the meat are covered with the Slow Cooker Sauce
7. Turn meat fat facing upward in slow cooker
8. Turn slow cooker on low and cook for 12 hours
9. Preheat oven to 200°C
10. After the slow cooker is finished, take the meat and place it gently on a baking tray lined with baking paper (Note: careful not to break the meat when moving it to the tray)
11. Baste the meat with a few tablespoons of slow cooker sauce and place in oven for 5 minutes
12. While the meat is in the oven, transfer the slow cooker sauce to a pot and bring to a simmer.
13. Keep stiring the sauce so it reduces a little
14. Take the meat out and baste with the slightly thickened sauce and place back in the oven for another 5 minutes
15. Take the meat out of the oven, slightly baste and let rest for 1-2 hours.
16. Cut or pull (your choice) the meat and use the reduced slow cooker sauce as a gravy.
Enjoy with an icy cold stubby.
