How to Make a Chocolate Cherry Cake From Scratch

Ingredients:

For the cake:

  • 2 eggs
  • Pinch of salt
  • 60g (4 tbsp) sugar
  • 50g (4 tbsp) vegetable oil
  • 80ml (1/3 cup) milk
  • 120g (3/4 cup) flour
  • 20g (1.5 tbsp) cocoa powder
  • 1 teaspoon baking powder

For the cherry filling:

  • 500g cherries
  • 100g (1/2 cup) sugar
  • 500ml (2 cups) water

For the icing:

  • 3 packets red cake icing (12g each)
  • 300g (1.3 cups) cream cheese
  • 50g (1/4 cup) sugar
  • 200g (1 cup) cream (33% fat)

Instructions:

  1. Preheat oven to 180℃ (356℉).
  2. To make the cake: In a bowl, combine eggs, salt, sugar, vegetable oil, and milk.
  3. In a separate bowl, combine flour, cocoa powder, and baking powder. Gradually add this mixture to the wet ingredients.
  4. Line an 18x28cm baking pan with baking paper and pour in the batter.
  5. Bake for 20 minutes.
  6. To make the cherry filling: Combine cherries, sugar, and water in a saucepan. Bring to a boil over medium heat, stirring constantly.
  7. Reduce heat and simmer for a few minutes until the cherries have softened.
  8. To make the icing: In a bowl, combine the red cake icing with cream cheese and sugar. Beat until smooth.
  9. Add the cream and beat until stiff peaks form.
  10. Once the cake is cool, spread the cherry filling over the top, then the icing.
  11. Refrigerate for 4 hours before serving.
