Ingredients:
For the cake:
- 2 eggs
- Pinch of salt
- 60g (4 tbsp) sugar
- 50g (4 tbsp) vegetable oil
- 80ml (1/3 cup) milk
- 120g (3/4 cup) flour
- 20g (1.5 tbsp) cocoa powder
- 1 teaspoon baking powder
For the cherry filling:
- 500g cherries
- 100g (1/2 cup) sugar
- 500ml (2 cups) water
For the icing:
- 3 packets red cake icing (12g each)
- 300g (1.3 cups) cream cheese
- 50g (1/4 cup) sugar
- 200g (1 cup) cream (33% fat)
Instructions:
- Preheat oven to 180℃ (356℉).
- To make the cake: In a bowl, combine eggs, salt, sugar, vegetable oil, and milk.
- In a separate bowl, combine flour, cocoa powder, and baking powder. Gradually add this mixture to the wet ingredients.
- Line an 18x28cm baking pan with baking paper and pour in the batter.
- Bake for 20 minutes.
- To make the cherry filling: Combine cherries, sugar, and water in a saucepan. Bring to a boil over medium heat, stirring constantly.
- Reduce heat and simmer for a few minutes until the cherries have softened.
- To make the icing: In a bowl, combine the red cake icing with cream cheese and sugar. Beat until smooth.
- Add the cream and beat until stiff peaks form.
- Once the cake is cool, spread the cherry filling over the top, then the icing.
- Refrigerate for 4 hours before serving.
