Easter Carrot Cake Recipe


 I made the best carrot cake that fits perfectly on the Easter table and is very simple to prepare. I bought all the ingredients from Auchan Romania. Their own brand products are excellent! They have very good prices now for Easter and the offer is valid until May 7th! I found everything I needed: decorations for the Easter table, baking accessories, and egg dye. I got the whole list of ingredients for cakes, pascha, and scones, and found really good prices on lamb, groceries, sweets, and drinks. Ingredients

For the Cake:

  • 375g carrots
  • 6 eggs
  • 300g unrefined brown sugar
  • 200g white sugar
  • 420g flour
  • 450ml sunflower oil
  • 1 sachet baking powder
  • 2 tsp cinnamon powder
  • 1 tsp ginger powder
  • 100g walnut kernels

For the Cream:

  • 500g mascarpone
  • 2-3 tbsp vanilla powdered sugar
  • 300ml liquid whipping cream

Method of Preparation

  1. Prepare the Cake Batter:

    • Preheat your oven to 180°C (356°F) with ventilation if available.
    • In a large mixing bowl, combine the eggs, sunflower oil, both types of sugar, a pinch of salt, baking powder, and spices.
    • Add the grated carrots and coarsely chopped walnuts to the mixture. Mix gently to combine.
    • Pour the batter into a prepared baking tray lined with baking paper.
  2. Bake the Cake:

    • Place the tray in the preheated oven and bake for 40-45 minutes or until a toothpick inserted into the center comes out clean.
    • Once baked, remove the cake from the oven, take off the baking paper, and let it cool completely.
  3. Prepare the Cream:

    • In a mixing bowl, whip the cream until it starts to thicken.
    • Add the mascarpone and vanilla powdered sugar to the whipped cream. Mix for another 1-2 minutes until the cream thickens further.
  4. Assemble the Cake:

    • Once the cake is completely cool, remove the convex top part and save it for decoration. Then, cut the cake horizontally into two layers.
    • Spread half of the mascarpone cream on the bottom layer of the cake.
    • Place the second layer on top and spread the remaining cream over the top and sides of the cake.
    • Crumble the saved top part of the cake and use it to garnish.

Notes:

  • Make sure the cake is completely cool before adding the cream to prevent it from melting.
  • You can adjust the sweetness of the cream by adding more or less powdered sugar according to your taste.
